Reviewed Roast Loin of Pork with Fennel

Made this for my mother-in-law's birthday. Everyone loved it. Pork was very tender and moist. Vegetables were great although we didn't care much for the fennel so I will leave it out next time and add more potatoes. The drippings are fantastic spooned right back over the meat and veggies.
