Made this today. Really versatile add whatever fresh herbs from the garden. I added smoked gouda and chicken with cucumber, cilantro basil and a smige of heat (seranno pepper)in addition to the recipe everyone loved it."

Way to much for two. cut everything in half and I twicked the recipe a bit. I used the trick with the parmeson rind. Omitted the tomatoe paste and used 1 can Rotel chopped tomatoes with lime and cilantro. It was just the heat I like. Great!"

What is the oven for?? I did not find this to be a keeper. I will stick to the standard oven baked and have an orange marmalade sauce over the top. The skin on my chicken is crispy and the marmalade is not to sweet but very tasty. I agree Alex is a very stuffy not so friendly attitude!
