I have never ever EVER liked oatmeal. It's a texture issue for me. However, I LOVE this recipe and I can finally eat oatmeal using this recipe! This salad will be served at the upoming University of Oregon at University of Arizona game on Sept 24, 2011. It's a perfect combination of Duck colors! I will take the advice of bakingdiva87 and add cilantro...extra green, and will use Trader Joe's frozen roasted corn for extra ease and yellow, you know! GO DUCKS and thanks Brian! "
