"I made this for a 60th birthday party and it went over very well. I did substitute roasted red peppers for the tomato since no good tomatoes are available in the winter. We will be using this recipe again utilizing the produce from our garden this summer."

The stock makes this dish, it adds a depth of flavor that you cannot get from stock in a box.

About Me

I am recently able to stay at home and take care of the family. We've planted a small garden in our backyard that is expanding every year. We grow many tomatoes, peppers, beans and herbs. I need to buy a new freezer this year as the garden is producing a ton of veggies. We've canned or frozen tomato sauce, salsa, chili sauce, pesto, green beans and eggplant so far. We have tried to cut processed foods out of our diet and only eat out once a month, so I do a lot of cooking.
