This cooking method works perfect every time for me. I used to only use her high temp method, but I think this is better! I usually don't use filet. I more often use a sirloin tip roast or even eye of the round or a top round roast. They are always perfect. I cook mine rare...pull the roast at 128 or 130 degrees and tent it with foil for 20 or 30...
