We called these �Popeyes.� I put a twist on these decades ago. I prepare the bread like a French toast. I partially cook one side, flip it, drop in the egg, and when that�s ready, flip it again to complete the cooking. The result should be a slice of French toast with an egg over easy in the center (with the yoke still runny). They�re great.
