I think it's cute to see all the people using an entire cup of salt on one recipe. I get a chuckle out of that but anyways....I just wanted to say that what really helps the flavor along is the oil. I've never used peanut oil for chicken but may try that. My mother used to use 1/2 crisco shortening and 1/2 oil and it always came out super crisp...
