Reviewed Roasted Eggplant Caponata
"I don't care if it's authentic. If it tastes fantastic, it gets five stars from me. Roasting and throwing food into a processor is a lot easier than chopping and sautéing. Ina makes things simple and as a mom of two small kids, I appreciate that. This is a great recipe and its good for you too!"
Reviewed Spicy Sausage, Chicken and Bean Pot
"Rachael really hit the nail on the head with this one! I made this last week and just HAD to make it again. The website didn't get the recipe quite right. Rachael added a couple of cloves of garlic and threw the sprigs of thyme directly in the pot. I thoroughly enjoyed watching this episode. It was Rachael at her best. This is now one of my favorite soup recipes. Thanks RR...keep ding what you do!"
Reviewed St. John's Club Kale Soup
"Seriously, I don't think you could make a sausage & kale soup taste any better than this. If you're looking for the perfect recipe, look no further. The soup itself wasn't spicy, but each bite of sausage provided just the right amount of spice. So comforting and hearty. Can't wait to eat the leftovers. My grocery store was out of fresh mint, but I didn't feel like it was missing anything. So if you're feeling iffy about the mint, you could definitely leave it out.
Reviewed Pork Chops with Golden Apple Sauce
"This was absolutely fantastic! My husband said they were the best pork chops he's ever had. I used dried cranberries in place of raisins (personal preference) and 1/2 t. Ground ginger in place of fresh (it's what I had. I used 2 golden apples (chopped and 2 honey crisp apples (peeled and chopped)...again, what I had. I served with a side of mashed sweet potatoes which were perfect together. I used a splash of the apple cider to thin the potatoes...nice touch! To start I made a mixed salad with walnuts, gorgonzola, pomegranate seeds, and raspberry vinaigrette. This is my new fav meal (especially for fall. Thanks RR...I'll be making this again and again!
