Reviewed Oatmeal Peanut Butter Energy Bars

"I thought this was a wonderfully basic granola bar recipe. You have endless possibilities with the dry ingredients (I've substitued the wheat germ for milled flax seed.) and the wet ingredients can be changed in countless ways as well. I've made them a few times now and each time I try something a little different and each time it's wonderful. The first time I used figs, cranberries, peanuts. The second time I used dried cherries, peanuts and 1 oz of semi-sweet baking chocolate, chopped. Also the second time around I added about 1/3 cup cocoa powder to the wet ingredients. Next I think I'm going to use almond butter instead of peanut butter and chopped almonds, coconut, apricots and maybe dried mangos. The possibilites are as limitless as your imagination and if that's a challenge for you, just think of your favorite granola bars and jump off from there."
