This was awesome! I was afraid that not covering the salmon would dry it out. My filet was pretty thin so I only baked it for 10 minutes, then took it out and covered it with foil for 5 minutes before serving it. It was perfect!

I don't know what I did wrong, but my turkey was way overdone. I had an 18.7# turkey. I brined it for 16 hours. I expected to have to roast it for 4 hours.
