This really is a terrific way to cook shrimp and I've made it 15 times. I buy the Costco frozen 4 lb bag of jumbo shrimp (13-15 per lb). I only buy the frozen, not the thawed ones on their seafood days to ensure freshness. After thawing them I toss in a good olive oil without salt or pepper. The strawberries were tasty but the ricotta was bland. I did blend the ricotta so that it was not grainy at all but it had no taste. Instead I paired the strawberries with madeline cookies and homemade whipped cream and that saved the day. ""
