Neither my wife nor I have ever been very good at frying chicken. We don't own a cast iron skillet so we can't do it like Grandma. We do have a small electric fryer & this recipe turned out the best fried chicken we have ever made! Now... a question. I can only put 2 pieces in at a time. I have mixed thoughts. I prepared a 19 lb. bird. I followed the recipe to the letter. The bird came out of the oven at preciscely 161 degrees, rested for 20 minutes.
