This is a wonderful, festive salad brimming with fresh flavors. The recipe states that only half of the dressing should be used (the remaining dressing would be served on the side for those who like more dressing). I wonder if Quilting Gram used all the dressing on her salad. A full cup of olive oil would be way too much to dress this amount of fish....

Brilliant! I will use this method from now on. Skin was a beautiful golden brown and meat was moist and delicious. I think the prep including 2 days with dry rub, covered with plastic wrap and then one day in refrigerator without plastic wrap to dry out the skin were probably key. I also tightly wrapped the finished bird with foil per the instructions...
