I love this recipe; however, the version on Cooks.com has the taste I remember from childhood. Instead of whole milk, it calls for 1 c. evaporated milk and 1/2 c. water. If you are following this recipe it is easy to overbeat; it should just be beaten until it loses some of the gloss - not for 10-15 minutes."

Perfect! My only comment is that I did also add more flour to thicken sauce. Seems 1/4 c. is not quite enough for 6 cups of broth. Soooooo delicious and comforting."

Sooooo Good!! I used much less Pancetta (about 4 oz.) and added boiled (for 3 min., then tossed in ice water), chopped asparagus which added a nice crunch and fresh green flavor to the richness. Used Cipriani Pappardelle, which was awesome!! Husband LOVED it. Am passing this along to my foodies!
