Reviewed Wild, Double-Cut Boar Chops with a Wild Blueberry, Balsamic and Sage Sauce Reduction

I made this sauce with fresh NC blueberries and sage today. I changed the recipe a bit, using only one tablespoon olive oil, used a bit more shallot and no garlic, substituting a can of beef consomme for the veal reduction and all the salt. I used 1 tsp black pepper.

What an amazing fresh sauce!! I used a high quality balsamic...
