I doubled the recipe and since I didn't have two cans of evaporated milk, I substituted one can of coconut milk. This was an easy and tasty rice pudding, but it was too sweet for my taste. Next time I make it, I will reduce the condensed milk; otherwise, the hint of cinnamon from cooking the rice with the sticks was very nice. Thanks!"

I never knew I loved tomatillos until I made this salsa, the roasted way and adding garlic as he did when I watched him make it on his show. I also roast the peppers with the tomatillos. I make this at least once a week and I usually double the recipe because if I don't it's gone in less than a day. "

Absolutely, these are the perfect blueberry muffins! My sons devour them, and they said these were the best muffins I've ever made. Definitely had to agree with them. I did add a light streusel on the top for a little texture; the muffin texture is light and not gooey--very simple recipe to follow with staple ingredients. "
