This is a good recipe but everyone is complaining about them being soggy or mushy. Well, regular "pancakes" are soggy and mushy to me which is why I don't like them. For this recipe, I left out the baking powder, used half the flour and used panko crumbs instead of the other half of the flour. Also only used one egg and added a palmful of grat...
