This may be the best thing I've ever made! I followed the recipe exactly and the meat is tender with a great deep beefy flavor. Delicious. I am going to let it sit in the refrigerator overnight and then am going to serve it tomorrow with gnocchi or pasta. Can't wait. This is definitely a recipe that I will make again.

Very good recipe but wish the fish had more flavor. Cooked it as stated without chervil and cooked it in EVOO. Next time Will play with the herbs and try some new ones. "

What is not to love? This is an easy, delicious recipe. I substituted chives for green onions, otherwise left the recipe the same and it came out perfect. Everyone at the table loved it. I split the recipe in 1/2 and it made enough for 8 people. They'll make great potato pancakes tomorrow!

Delicious! This was one of the most tender, juciest hams I have ever made. I did have to cover the top of the ham for the last 1/2 hour of cooking because it was getting black. But it was easy and the flavor was incredible. Another awesome Emeril recipe!

I thought the sauce was good but not "gourmet" quality. I couldn't taste the Brandy or the thyme even though I added additional fresh thyme. I think I will try again with adjustments.

Very good. Used a Blade Steak which came out very tender and the Chimichurri sauce was very tasty. Next time think I would cut back slightly on the garlic and oregano and use a skirt steak or tri-tip. Would be great served over a rice.
