I substituted left-over marinara sauce that I had on hand for the chicken stock and ketchup -- very tasty and wonderful for next day sandwiches. I agree with the fork mixing method for lightness.

Don't understand why people post 5 star reviews when they haven't even tried the recipe .. how many times have they seen something that looked or sounded good but simply didn't work out as described .. at least give it a chance before rating

thought the amount of wine was overwhelming ... reduced wine & substuted a little broth ... were the folks who complained about the salt content using KOSHER SALT? ... need double the amount of Kosher to regular table salt

This is a good, all purpose meat loaf recipe ... I substituted recently prepared marinara sauce for the tomato paste and the ketchup topping ... thought it presented a more mellow, flavorful, moist topping.

I do not understand how a viewer (hopkinton 79) can rate a recipe with 5 stars if he/she virtually changes all the ingredients in the recipe. A totally different taste is created with different ingredients. Aside from being very quick and easy to prepare, I thought the recipe was pretty good exactly as presented.
