"So easy and good. It passed the husband test. My husband does not like vinegar so I just used a little extra lemon juice. The best part is that the hummus is made with stuff that I have on hand anyway. So I can always just go to my pantry and whip up a batch."

"This recipe was easy and is better and a lot less expensive than the rolls of premade polenta you can get in the stores. After I tried this recipe, I noticed my slow cooker cookbook has a recipe for the same thing (it called it corn mash that did not require starting on the stove and dirtying an extra pot. I will have to try just going straight into the slow cooker next time to see if the extra step is worth the effort.

"I have made this recipe a few times. The first time I made it per the recipe and it turned out good. I tried it with brown rice to make it healthier. The brown rice took much longer to cook and although it tasted ok, never got that soft pudding texture. I also made it with quinoa. The quinoa worked well and had a nice tapioca texture.
