Reviewed Coconut Cream Cake

"Incredible. I made a couple changes but in no way did the changes keep it from being an awesome cake. I made it in a deep sheet pan and adjusted the time in the oven. I toasted the cocount for the frosting in a couple tablespoons of butter on top of the stove, so the coconut in the frosting was incredible too. Great flavor enhancement."

"I know this is a low rating but I'm going to make it again. Missing information is how thin the slices of the fruit should be. These fruit have so much moisture, they should be sliced very thin. The thicker the slices, the more liquid in the fruit. In addition, if the slices are not thin the sugar is not enough since apricots can be really tart"

"This was simple to make and great tasting. The crust was perfect and the filling was better than any others I've had. It will be my go to recipe for family events. The lemon juice kept it from being too sweet.

About Me

I've cooked my entire life.  I'm now 60, and I've been cooking since I was about 5.   I was even scratch baking by the time I was 7 years old.   I cooked for a family when my child was growing up and now I cook for just me.
