"This soup is absolutely delicious without changing a thing. Probably one of my favorite Giada recipes yet! The parmesean rind is the key. You taste it in every bite and it gives the soup a really hearty taste and texture. The only thing I did differently was that I added an extra can of beans since most of the first can becomes a puree/paste. My husband and I are now big fans of swiss chard in soup, too! It's texture holds up much better than spinach, and I will be trying it in other soups after making this.
