"yen (commenter below) - you cannot substitute morton salt for kosher salt. the grain of morton salt is much smaller and you will end up with way more saltiness than was intended by the recipe. I am not positive about this, but I think you would want to half the amt of salt when using regular table salt as opposed to kosher. I think there are only two ways to fix this: (1) start over or (2) double the brine recipe but do not add any more salt and then use only half of what you make.
