Reviewed Roasted Cornish Game Hens

"I made this for Christmas this year and it was wonderful- moist and full of flavor, I used 4 hens and a half a chicken I doubled the seasoning, I added a couple cloves of garlic to the celery, onion and pepper and like another reviewer I added a slice of lemon in each hen I also squeezed a bit of lemon juice inside each cavity before stuffing. I soaked the hens in a salt/sugar brine for about 1 1/2 hrs prior to seasoning and like another review I pre-heated my oven at 400 then turned it down to 375. This was the best roasted chicken I have ever made all my guests raved about it and people have been calling for the recipe.
