"I made this today with a bit of a variation. Eliminated the thyme and mascarpone, but added 8 oz shredded chipotle gouda just before serving. It was delicious and I called it Chipotle Gouda and Roasted Red Pepper Soup (clever, huh? ;). I will definitely make it exactly by the recipe, too, because the base was flavorful and easy. "I would give this recipe more stars if I could. It is delicious. The stock was easy and so full of flavor.
