Delicious! I didn't have the tiny cast iron skillets so I made them in several large skillets making 3-4 in each skillet. I think they would have worked on cookie sheets too. Interesting blend of flavors.

I emailed FN and they helped me figure out the problem to the printing issues. It varies depending on Mac vs PC, and the browser software you're using. For Chrome, it works just fine. Punkinspooky - PRINT and SAVE buttons only appear if you are using a PC and Internet Explorer. If you are using a MAC, or Safari, or iPhone, or iPad, there is NO PRINT BUTTON!! Guess they didn't bother to test it on all systems and all iOS operating systems.

Our school uses Macs and iPads and culinary students are completely frustrated...

To get the recipe, you have to type in Smoked Salmon Frittatas into the FN search engine at top, then you'll find Giada's. I'm convinced FN does not read what's written here. Urge people to call FN or Scripps Network and register complaints about whatever incompetent company redesigned the website. It is a colossal FAIL and needs to be "chopped!!!"...

Recipe clearly states to adjust consistency with additional buttermilk. Did you miss that part? If it was too thick, you just needed more buttermilk.

Made this for New Year's and was so creamy and smooth. I used a little less of the Harissa since there were kids in house don't like things too spicy. Overall, great flavor, more of a grown-up version of Mac and cheese. Love your recipes, Demaris!!!

Coconut oil that I get is solid but melts at very low temps. eg if my house is warm, the coconut oil is liquid. If my house is cooler, it becomes solid. Doesn't seem to matter or harm the coconut oil going from solid to liquid.

Key is using sugar pumpkins for baking and not the big ones used for carving. Big carving ones produce way too much liquid! If regular pumpkins because that's all you have, line a sieve with cheesecloth, pour in cooked pumpkin and let excess water drain away. Sugar pumpkins are smaller...
