Wows and raves from the group! Followed the potatoes verbatim- they were great. Feel free to use your own combinations of meats, my mixture evolved into using ham, ground beef and bacon. Be sure to season generously. Also increased the tomato paste liberally (increased umami and it really enriched all the flavors. I tripled the recipe, took one pa"

Reviewed Veal and Mushroom Stew over Mascarpone Ravioli

Jan 13, 2012 in Food Network Community Toolbox on FoodNetwork.com

I find the suggested time frame QUITE MISLEADING. Veal reduction is not something one just whips up...
The recipe is tasty but be warned you will struggle to find veal reduction and making it takes two days to do correctly. ""

Reviewed Brussels Sprouts Supreme

Jan 8, 2012 in Food Network Community Toolbox on FoodNetwork.com

I've made this twice and the second time was perfect. Be sure your Sprouts are fresh and sweet, reduce the chicken stock to a glaze before adding the nuts and pepper. Do not reduce the cream by much before adding sprouts back in. Great dish! ""

Easy comfort food!
I reduced cooking time to a total of 1.5 hrs, did not add the canned limas. Add about 4z ketchup in lieu of sugar and margarine, add 2z worchestershire or tt (to taste). ""

Reviewed Maple Glazed Walnuts

Mar 21, 2011 in Food Network Community Toolbox on FoodNetwork.com

Outstanding, I now keep these on hand for nightly salads and snacking. Be sure to carmelize the nuts as the syrup is reduced/absorbed. This will make the coating crunchy and they'll stay for up to a week in a sealed container at room temp (if they last that long!). "

Flavorful, different, fun. Make a tomatillo salsa to go with, adds a delightful sweetness! I used a piece of chuck in lieu of skirt. The key is cooking the meat long enough and reducing the remaining juices so the meat is not swimming.
I like this chef, she keeps the recipes simple and tasty.
