Reviewed Horseradish-crusted Chinook Salmon with Braised Greens and Roasted New Potatoes

I made only the salmon portion of this recipe. It was super easy and tasted great. My husband is not a salmon type of guy, and even he liked it. I did not bother with Chinook salmon; I just got regular salmon filets from ACME and they were fine. Will be making again.

I did not find this recipe to be anything special. Although I marinated the chicken for 3+ hours, I did not taste the balsamic flavor. It tasted like plain old roasted chicken. I will definitely be looking for a tastier chicken recipe.

Yummy, healthy, easy dinner. I used ground chicken for a more healthy alternative to beef. It was easy and quick to make. I also added zucchini and fresh bean sprouts, which gave it some nice crunch.
