Alton Brown Recipes: Concise, Consistent... And this one is Crunchy!

I probably should have started with Alton Brown's recipe to begin with. He has never steered me wrong. His recipes work!

Fantastic!! We were craving more the next day, but sadly our trip is over so I have to learn how to cook Cuban!! The atmosphere at 90 Miles Cafe was wonderful! We ate on the back terrace. It's BYOB, so we bought their pitcher of Sangria mixture and added our own red wine.

This recipe lacked clear instructions on the hardest part.
At what temperature do you melt the sugar? How long?
When exactly do you stop? what do I look for? I even rewatched the video twice,
I did everything carefully and lovingly, but did not produce syrup, but hard, chewy candy that could pull out dental fillings.
