My Activity

Reviewed Chipotle Black Bean Soup

"Mmmmmm.....very tasty! This is very similar to Panera's black bean soup! I subbed veggie broth (instead of chicken broth) and did without the sour cream (easier on the tummy!). A very nice staple to have in the freezer."

Reviewed Three Bean and Beef Chili

"Great recipe! I made this 2 weekends ago, and I'll make it again today for a big Football day! I do not eat meat, so I substituted ground beef "crumbles" and it tasted just the same. Can't wait to have it again.""

Reviewed Veg-Head Three-Bean Chili

"DE-LISH! Thanks Rachael. I made this today for a football game. I ended up using the whole can of re-fried beans (made it nice and thick!) and used soy based cheese on top. Can't believe how easy it was. And makes the house smell great!

Reviewed Lentil Quinoa Salad

"Just made this--and LOVED it! I was surprised that with only the little amount of dijon mustard--I could still taste it! I am not a fan of cilantro, so I left it out. Also, instead of the microwave, I cooked both the lentils and the quinoa on the stove. For those of you who do not live near a health food store, I recommend you "bulk up" if you're ever in the vicinity of one! I am lucky enough to live near a Whole Foods, so I buy quinoa by the pound and it's pretty cheap. I will definitely make this again SOON--and even double the recipe so I have leftovers!
