Turned out great, we buy the big gags of ground Parm from Costco, so I added some panko and gave the chicken a little egg wash. I also had large breasts so I butterflied them and pounded them out a little so they were a consistent thickness. The Potatoes turned out great, I think next time I would deal with the cleaning of the sheet rather trying...
