You find the shortbready ones with baking powder in northern NM. Yes, there is a difference between southern and northern NM cuisine."

Having eaten this at The Shed in Santa Fe (where this recipe comes from) many, many, many times over the years, I can tell you that this recipe is exactly the same and tastes great! Comes out tasting and looking exactly the same.

I've never had a problem with it setting up properly, even with Albuquerque being about 1700 feet l...

I made this when what I originally intended to make wasn't going to happen (long story). I admit that I short-cut all over the place as I simply didn't have time to make the stock and fry the chicken. I used a good pre-made stock and sauteed the chicken in some butter. Everything else stayed the same. It came out wonderfully!"

These are ridiculous they are so good. I changed one thing, though. I wasn't able to find any Manchego that wasn't insanely expensive, so I substituted Irish cheddar. Lovely!
