I made is soup for a gathering of 5 people last night, including 2 hungry teenagers. There was no talking, except to ask for more French bread to sop up all of that delicious broth. I loved this recipe. I modified it slightly in that I also added some red and green bell pepper to roast along with the tomatoes and garlic. With a salad consisting of baby spinach, dried cranberries, walnuts and dressed with a little olive oil, salt and pepper, the meal was both delicious and satisfying."

I made this meatloaf last night, and I couldn't believe the ease, nor the taste. My children were floored at how amazing it tasted, and I did not add the salt the recipe required. This is going to be a staple in our diets from now on.
