Reviewed Deconstructed Eggplant Parmesan Sandwich
"I never made eggplant before but felt brave and bought one to try out one of Jeff's recipe. I didn't follow it exactly but the eggplant panko/pamesan frying technique was fun. I used roasted red peppers and spaghetti sauce since I didn't have whole tomatoes and used ricotta cheese. Came out delish. I hate the smell of eggplant but this recipe ""
