Reviewed Spanish Pea Soup with Crispy Ham

Soups can be good, soups can be easy. This one is both, exceptionally so. I like split pea soup but this is a different animal altogether, much fresher. Good ingredients make a big difference here. When out of homemade stock, I buy broth and simmer it with mirepoix and herbs for a few hours. Also, regular supermarket peas are to be avoided. "
