About Me
I am a paraeducator in Houston Texas, and I breed and show Bichons Frises. My wife and I live in Humble Texas with our two Bichons, Peek-a-boo and Tommy. My wife works a Well service company..oil business...here in Houston. I love sports of most kinds, college and professional football, NASCAR, Astro's Baseball, and golf. I love to cook, and love trying new recipe's that I make up myself. I also love Emeril's cookbooks, especially one's with seafood.
Favorite Foods
I love Mahi Mahi, Swordfish and Vera Cruz style Mexican food. I have heart problems so I try to cook very heart healthy foods that are low in fat, salt, and high on flavor using fresh herbs. I am famous for my Sausage, chicken and smoked turkey Jambalaya, as whenever we are going to a pot luck, I am always asked to cook it ( which I can't eat anymore, but I'll still fix it for my friends). I also make a pretty good Chicken and Sausage Gumbo or Seafood Gumbo, which I learned from my wife's cajun mother. I love New Orleans style cooking, but can't eat most of it, so I am learning to cook the old classic New Orleans recipe's without all the fat and salt.I have many different cookbooks, but love my Eeril Cook books, one of which he signed. I also have a really good low carbohydrate Italian cookbook from Andrea's Italian Restaurant in Metairie Louisiana...a suburb of New Orleans. If you ever go to New Orleans, you must go to Andrea's...it's fantastic!!!
Our favorite restaurant back in New Orleans was Emeril's Delmonico on St. Charles Ave. It's unreal!!! It's where we always went for our Anniversary. Here in Houston, there are so many chains, its been hard to find a really good place. I would say that so far we like a small Italian place, Gio's Italian Grill the best so far. It's just below the Woodlands, in SPring Texas. Excellent food, very fresh and has a really nice atmosphere.
