YESSS!! Add lemon zest to the dough to make it more exciting. Also I would recommend using less sugar than the recipe asks, especially if you plan to top it with something sweet

I used about half the sugar recommended because I was working with very ripe bananas and they were perfect. I also added chocolate chips and walnuts. Seriously one of the best foods! Perfect topped with butter or cream cheese paired with a cup of milk or tea

Fun variations include using hazelnut oil instead of canola and adding hint of nutmeg and cloves, which always go so well with cinnamon. Try adding chocolate chips for more sweetness. I had to bake mine a little over 30 minutes actually to keep them from getting doughy but that's because I never use the full amount of baking powder to keep the flavor....
