"This recipe is so easy and a great way to use your leftovers, especially if you make a whole batch of risotto for two people. If you are missing the protein in your meal, mix it in with your risotto before you make your cakes! I make a mushroom sausage risotto and a prosciutto spinach risotto, both which turn out into perfect cakes the next day!
As for the falling apart issue, watch the video. You have to have the proper cake consistency and let it brown enough before you try and flip it.
