I was looking of a meat-free crock-pot recipe... found this and LOVED IT! I try to use organic ingredients so for this I used a bag of frozen organic "Southwestern" veggies. The bag of organic veggies was under $3, which was a major bargain! I cooked it all day on low in an old crock-pot and it was just perfect! ""

LOVED IT!!!!!!!! Good way to use up frozed dumplings. I swapped the spinach for baby bok choy and didn't have sherry so I used a little extra sesame oil and soy sauce. My husband was very happy with it!"

I made for dinner with shrimp -to save $- and without the pot-pie topper. It was REALLY good and I had everything I needed to make already in my fridge and freezer. I swapped the fresno chili for 1/2 red bell pepper. My husband loves Old Bay so when we watched this episode on t.v. I immediately printed out the recipe and got to work! Thanks Rachae"

Loved it! It was easy to make but also a true comfort food. Never used eggplant before and it was really good. I made it with a meat-free veggie meat product and you could not tell the difference. Easy to make this a vegetarian meal. It will be a new "staple" in our home! Thank you!"

I'm giving this a 3 start because I HOPE it will be good once it re-heat it tonight. I cooked it exactly as directed - but kept on cooking it past the 7-8 hour mark at the beans never became soft.
