This was absolutely wonderful even though it took an hour to cook. I used a heavy roasting pan and couldn't get the water to boil. As always, Emeril's recipes rock. This was very good. I was surprised when I read the reviews that the potatoes were not cooked enough since the recipe calls for cooked potatoes.
