Reviewed Super Zesty Potato Salad

I liked it enough to make again, but I thought it was heavy on the mayo. I will make half the amount of mayo next time to lighten it up. To offset how saucy it was I added 2 more ribs of celery and some parsley. I also didn't let the bacon soak in the red wine vinegar to avoid it getting soggy. I just added it in with the potatoes. "

I love chorizo, and I love all the vegetables in this soup. It was fun to make, and I will make it many more times. It didn't seem too light or too heavy so would be suitable any time of the year."
