The chicken was definitely tasty, but I would cut down on the amount of cumin. I would also recommend pairing this chicken with a mango salsa topping or mixed green salad with avocados and tomatoes. This was far better than I expected. To make it vegan, I used olive oil and vegetable stock. It was fantastic. I had all this celery from a [failed] juice fast and needed some way to eat it (without peanut butter...). This was wonderful and I will definetly make it again, probably with carrots!"
