"I'm making this now. The timing in the recipe has to be off. It says "cook time - 2 hours." For a 3 1/2 pound rib roast, it won't take more than 1 - 1 1/4 hours total. If you put the potatoes in after an hour, they won't have time to cook. I wish this recipe reflected the correct times.
