People look to me as though I am some sort of authority on grilling meats, I've never thought of myself that way. With experience, you come to understand combinations of salt, heat, smoke, and cut, but by then, you settle into only a few recipes that you really like.  Now, I only advocate those that have the proper trade-offs between the price of the cut, the value of preparation time, and whether the recipe works for entertaining.
