I';ve been cooking for well over 35 years, and I had never made meat loaf. Strange, right? Mostly because all the meat loaf I had in my life tasted gamy or rotten in the middle. Only my grandmother';s meat loaf was edible for me, and I was foolish enough not to get her recipe before she died. :( Fast forward to today, and my husband was c...

In N Out is exceedingly overrated. The menu is boring, the hamburgers are pedestrian, and the service is something out of a Stepford Wife movie. I don't get the fascination it holds, but I've always chalked it up as appealing to people with immature taste buds.

I had to throw it out because everything tasted bitter, and the texture felt slick in my mouth, which is totally gross. I made it with lard like my ancestors always used, and that corrected this fatal flaw.

I'm allergic to juniper in ALL forms (including gin), so I used rosemary + lemon zest + lemon juice. The lemon juice has the added benefit of its ascorbic acid canceling out the nitrates in the saltpeter. Now the hysterical types can settle down about using this negligible amount of saltpeter. :::roll eyes:::
