The thing about the fruit is that it has pectin in it to help thicken the sauce as it cooks. They mentioned that on the episode of The Kitchen when she made this recipe.

LOVED this cake. We had it several mornings for breakfast. Even my teenage son and his buddy loved it. I left out the nuts, but might try pecans next time as I'm not too fond of walnuts. From what I understand, peppermint OIL and peppermint EXTRACT are two different things. I have used the oil to make rock candy at Christmas and it is VERY potent. Thinking it would give a much stronger flavor than the extract in this recipe, but would be easy to overdo. The oil also comes in spearmint flavor, cinnamon, etc. It is seriously very strong....

Perfect! I adjusted by subbing in 3/4 cup butter flavor Crisco for the shortening & butter, used less cloves. Didn't have allspice so put in a dab of pumpkin pie spice and a dab of nutmeg.
