Was looking for a recipe for baked cod & this one caught my eye. I don't usually like RR recipes but this was fantastic! Slice the fennel, onions & potato thinly & they cook up wonderfully! Trying just the veggies tonight with pork chops.

However, just so y'all know, I tried baking them instead of frying them to try and save on the fat calories and "no go"...they didn't get crispy enough and so the skin was just blech!! I LOVE salads and am always looking for something a little different...this hit the mark! The sweet strawberries cut the sharpness of the sherry vinegar and the bitterness of the arugula. I, too, added some goat cheese crumbles and the tang from it was a nice contrast. Didn't have poppy seeds so I used toasted sesame seeds instead. Can't wait "

Made these for the Superbowl party and they were a hit!! They are very rich so I cut them in half and brought half to work...everyone loved them!! As others have said, unwrapping and melting the caramels took some time but it was sooooo worth it...the top layer is a bit tricky and I will try the refrigeration method next time so it sets up bett...
