Reviewed Gina's Banana Cupcakes
"These were absolutely amazing!!! I was careful not to over mix or overbake. 20 minutes is ALL it needs. I questioned whether it was done or not, but decided to trust the recipe and take them out to cool. they were perfect. The frosting i was afraid was too....molasses-y. But together with the cupcake there was not doubt that this was a gen""
Reviewed Simply Delicious Strawberry Cake
"GREAT recipe. Even though there are a few errors, i caught them and it was wonderful.
I followed the advice of another poster and added 3 T. flour, and baked it pefectly at 33 minutes! PERFECT texture.
Also, Instead of having leftover strawberry puree, I took the one 15 oz. container of strawberries and pureed them. I reserved a 1/4 cup of puree from this for the frosting. So, I didn't use the full 15 oz. in the cake, and I didn't have to use another container to get the little bit for the frosting. It was ideal.
I used about 5 cups of powdered sugar vs. the 7 cups. again. perfect! Five stars would have been a recipe that didn't need so much tweeking. this IS baking...it needs to be more precise. "
Reviewed Pork-and-Pumpkin Chili
"Amazing recipe. I used pork loin....and cooked it much longer in my dutch oven to get the same tenderness you'd get from the pork shoulder. ALSO...since it was more 'soupy' than i expected, I added another can of pumpkin. Didn't really solve the soupy-ness so I made a big batch of polenta and served the chili over the polenta Shrimp and Grits style. It was excellent. sort of cut down the heat, but was still really flavorful. Served to group and had many requests for the recipe.
The pumpkin cream though....really made the dish.

Favorite Foods
I love to make just about anything. I really love a dish that fills a plate...or requires a bowl. I am becoming famous for my Shrimp and Grits recipe (a tweeked version of Tyler Florence), and my favorite is a Gaida recipe called Pork Chops with Fennel and Caper sauce. it is amazing. I love all restaurants. ALL of them. A good restaurant is consistent, has great wait staff who knows how to time the delivery of your food, and makes you feel like you are in a corner of your own world.
