"I made one loaf and one full muffin pan. I had to use EVOO for the 1c. oil but no noticeable flavor difference. I chopped up 1/2 cup pistachios instead of pecans/walnuts and added 1/2 cup craisins. My toddlers are raving over the muffins and really like finding the craisins inside."

"Another home-run mac-n-cheese recipe from this site. I did Ina Garten's and loved it also. Not sure why my 3 sons have never raved over a mac-n-cheese in their lives that wasn't from a blue box. It kills me since I'm trying to cook with love and provide a more nutritious filling meal to fuel their energetic little bodies with real cheese rather than that powdered, over salted stuff. :/
