Reviewed Beef Stew

"Hubby and I have been making this specific recipe for years. We season the flour/beef with Emeril's Essence before browning and always use chicken broth. It is out of this world. We've never tried the vinegar, but I'm sure that would be very good (I may sneak it in eventually, lol). Best Beef Stew recipe ever!"

Reviewed Toasted Baguette

"Made this tonight and loved it. Used half melted butter and half oil, garlic powder, and real Parmesan. Served it with the Neely's chicken noodle soup. It will be a staple around here.

Reviewed Mama Jean's Chicken Noodle Soup

"Made this tonight. Fantastic! Of course, I had to play around with it (lol).

-Doubled the recipe. Could have tripled it though (family of 5)
-Used bone in chicken thighs and skinless chicken breasts. Poached in the veggie and broth mixture, removed when done (about 20 min), cubed, sat meat aside and returned bones to soup, removed bones just before serving when I added the meat back. Important to skim the fat off the top when using skin on chicken.
-Only added 5T of flour because I was afraid that 6 + noodles would make it too thick.Should have added all 6
-Forgot the fresh Dill at the store and used a dried dill blend. Definitely missed the fresh. Added Thyme, perfect combo.
-Could have easily tripled the veggies (remember I double the recipe) and would have been fine. I like lots of veggies though

Looking forward to making this again tomorrow to combine with the leftovers, what little there is, from tonight. First Pat and Gina recipe I've made. I'll be looking to make more.

Reviewed Cream of Fresh Tomato Soup

"This was very good. I also flash peeled the tomatoes so I could decide just how chunky I wanted the soup without worrying about the peels. I used the left overs as a base for Giada's Quick and Spicy Tomato Soup. Instead of using the cream, I topped the soup with a dollop off Greek yogurt. Fantastic! Looking forward to making it again. May try roasting the tomatoes too.

Reviewed Quick and Spicy Tomato Soup

"Absolutely wonderful! Used 2 split chicken breasts and some veggies to create my own stock. Cooled, deboned and deskinned the meat and added it back at the end. I also doubled the beans, used a fresh sprig of rosemary, and simmered with a wedge of Parmigiano-Reggiano rind (one of Giada's best tips). I was out of jarred marinara sauce so I used Ina Gardens Cream of Fresh Tomato Soup (without the cream) instead. Definitely will make again soon.

Reviewed Mexican Rice

"Wonderful! I added in 1/2 tsp cumin and about 1/2 cup of yellow corn - to make this a full on meal, adding black beans as well would be great!- Also used brown rice and reduced fat sharp cheddar cheese. Since my kids were eating it, I used tomato sauce and added in green chilies separately for my husband and me. Personally, I would have liked the diced tomatoes Paula used, but my kids wouldn't have touched it if they saw little chunks of tomatoes. Topped it with some Greek yogurt and a little taco sauce -used on grilled chicken I served it with.- This will be a staple in my house! No more powdered and salty packets for us :. Thx Paula!
